This is a really yummy salad, that makes a nice side for seafood, or a meal on it's own. It has so much flavour, there is no need for a dressing.
- 250 g cherry tomatoes, quartered
- 1⁄2 cucumber, diced
- 4 hard-boiled eggs, chopped
- 1 small red capsicum, finely chopped
- 1⁄2 small red onion, finely chopped
- 200 g ashgrove wasabi-flavored cheese, diced
- 2 cups iceberg lettuce, shredded
- 1 avocado, diced
- Combine all ingredients in a salad bowl, and toss together!
