- 200 g unsalted margarine (softened,room temperature)
- 200 g caster sugar (or granulated, your choice)
- 3 eggs (separated)
- 200 g plain flour
- 2 teaspoons vanilla, escence
- 1 teaspoon baking powder
directions
- Take the softened butter and caster sugar, then cream them together till pale and fluffy.
- Beat the egg whites until half way between egg whites and soft peaks. Then beat the yolks. Add the two eggs together and stir into the butter mixture bit by bit.
- Sieve flour and baking powder into the mixture-folding it with a wooden spoon.
- Spoon the mixture into paper cases, filling them to about half way.
- Pop into the oven an bake for 15-20 minutes.
- Enjoy.
