I boiled the potatoes in low-sodium chicken broth and left out the bouillon and salt and replaced bacon with 1/2 cup cubed ham. I included the fourth cup each of sour cream and chives. This was very easy to make and nice and thick like I like it! Thanks for sharing your recipe Cypress. Made for Pick A Chef Spring 2011.
