- 1Season fillet with oregano, salt and pepper.
- 2Heat oil in a large pan; saute onions, garlic and carrots for 3 minutes over medium high heat; sprinkle brown sugar over onion mixture to caramelize saute for 2 more minutes.
- 3De-glaze with chicken broth, lemon juice and rind and white wine.
- 4Place peppercorns, salmon on top cover and simmer over low flame for 7 minutes. Top with capers and serve.
