Yummy Mango Salsa

"This is a wonderful recipe I adapted from Insider's report magazine. It is great to serve at Christmas or anytime because of the colour. Wonderful with Brie in pastry."

• Serves: 4

ingredients

• 1 large tomatoes, seeded and diced
• 1 ripe mango, diced
• 1⁄3 cup diced red onion
• 1⁄4 cup chopped Italian parsley
• 2 tablespoons seasoned rice vinegar

directions

1. Stir together and refrigerate 2 hours.
2. Can be made day ahead.
