A great way to get a healthy dose of Omega 3s! These pancakes have a delicious, nutty, buttermilk taste.

Tip: buy whole flaxseeds and grind them up in your food processor or coffee grinder for ground flaxseeds. Then, keep them in the refridgerator for about three weeks as they get rancid quite quickly. You can also buy flaxmeal at stores, which is just flaxseeds already ground up for you.

  1. Mix all dry ingredients.
  2. Stir in egg, milk and vanilla.
  3. Mix until blended but don't over beat.
  4. Spray griddle with butter-flavored pan.
  5. Scoop pancake batter out by 1/4 cups.
  6. Cook pancake on griddle until bubbly, then flip.
