Great potatoes!! The sweetness from the sweet potatoes and the saltiness from the bacon was a perfect match! Made with shallots rather than onions. Will make these again! Made for ZWT8.
Yummy says it all! Never made sweet potatoes with bacon, this is a wonderful combination which I will make again. I used turkey bacon for the bacon and a little more butter, and we had this with Huevos Divorciados which makes a perfect match. Thanks for sharing this recipe!

Delicious! My family loves sweet potatoes so I am always on the look-out for new ways to fix them. We loved the flavors of the bacon and onions with the sweet potatoes. I made this as written, except I parboiled the sweet potatoes (whole and unpeeled) for about 10-15 minutes. I let them cool for a short time before peeling and slicing them. I didn't use any sugar and only a light sprinkling of salt. I cooked this dish in a cast iron skillet and did have to add some additional butter to prevent the potatoes from sticking to the pan. My family devoured this and gave it 2-thumbs up! Thank you for sharing this wonderful recipe...it is definitely a keeper!

This is a terrific recipe. It almost tempted my bacon loving sweet potato hating son to try them. I swear there is nothing that bacon doesn't make better. I did partially cook the sweet potatoes first and then fried them with the skins on. I did cube them so that I could more easily get a larger quantity in the pan. Next time I will just slice them as the recipe suggests. I have always loved leftover sweet potatoes fried in butter and now I may just have to add bacon. Thanks for sharing your recipe. This sounds absolutely delicious...we are going to try this for supper tomorrow with broiled tilapia...so I will update officially when we do... UPDATE--1-28-10-- Made this tonight with the Broiled Parmesan Tilapia and corn. I used turkey bacon that I cooked in the microwave and I also cubed my sweet potatoes and cooked them prior just to shorten cooking time. Instead of using white sugar, I sprinkled some brown sugar on top as well as sprayed a little spray butter on top. I did try this just plain as well and all in all it is very good either way! We will definitely be making this again. Thank you for sharing.
Originally rated on 2/7/09 - This recipe made it into my book#266453. Based on WiGal's recommendation, I made these sweet potatoes for a side dish the other night. Oh my gosh, were these ever good!! We just loved them and I already have a craving to make these again. I used 2 sweet potatoes and left the skin on (more nutrients that way) , slicing them thin. I doubled the amount of bacon (we love our bacon!) and cooked them until "just done" before adding the rest of the ingredients. I will omit the sugar next time, just because I don't think the sweet potatoes need it. I cooked the sweet potatoes for a good 20 min. because we like ours a little bit crispy. Delicious!!!!!
This was really good. I also diced the potatoes and I really liked that. The flavours were fantastic and it made for a great side dish, sort of like a hash. Thanks!
These were very good. I diced the potatoes vs. slicing and used olive oil instead of butter. Really wonderful combination.
