Yummy Apple Salad

"This is another TOH from 99 and has become our family favorite. This salad will keep for up to a week in the refrigerator. The original recipe calls for all green apples but I prefer the combination of both red and green. Same with the grapes - add a few red if you like. My kids don't care for nuts so I usually leave them out. This is a great fruit salad for entertaining since it makes a lot. The cooking time is chilling time after it has been prepared"

  • Drain pineapple, reserving juice.
  • Set the pineapple aside.
  • Place juice in a saucepan; add butter, sugar and lemon juice.
  • Bring to a boil.
  • Combine the cornstarch and cold water until smooth.
  • Add to the saucepan, stirring constantly.
  • Return to a boil; cook and stir for 2 minutes.
  • Chill.
  • Stir in mayonnaise.
  • In a large bowl, combine pineapple, apples, grapes, poppy seeds and cooked dressing.
  • Fold in pecans just before serving.

  1. This salad was an easy salad to make and the directions were very clear. I added more pineapple and did not use the pecans. I made this Apple Salad on Saturday to take to Easter lunch on Sunday. The apples did not turn brown. And the name says it all...it is Yummy! Thanks for posting this DDW!
     
  2. This was delicious.I used two kinds of apples and subbed fresh mango chunks for the grapes (didn't have any) and almonds for the pecans which stayed crunchy better. Took it to a potluck and they ate it up.
     
  3. We really enjoyed this! The main reason I chose to make this was because it says it will keep a few days in the fridge, and that's very necessary for the two of us! Even so, I cut the recipe in half. Perhaps as a result, the juice and cornstarch mixture got so thick that I couldn't stir in the mayo properly. It was lumpy. But I was relieved to see that when I tossed it with the fruit, the lumps either disappeared or you could no longer see them! The toasted pecans are a great addition, but if this salad is going to be in your fridge for more than 24 hr, best to leave them out.
     
  4. Very tasty salad! I made it as written except reduced the ingredients for just two of us with leftovers. It reduced beautifully. I didn't have poppy seeds so I left them out but don't know if they were missed as it was excellent without them. Thank!
     
  5. Awesome apple salad. Made no changes and won't next time either. I'm delighted to have the leftovers in the frig.

  2. The name says it all -- this is yummy and the whole family loved it! Perfect for family gatherings becaude this makes a lot of salad! Instead of pecans I used walnuts and I also used a collection of apples (red and yellow delicious and some granny smith). Thanks for sharing -- this is in my keeper collection.

My grandmothers were very good cooks and I have fond memories of the meals they prepared. We love entertaining and nothing pleases me more than having my family and others enjoy the food I make. I love it when the house smells good with dinner or whatever is baking. I came upon recipezaar searching for a rhubarb cake recipe one day. The recipe I chose was a 5 star and my addiction began. It took a few months before I started really utilizing the site but once I did my cooking has never been the same. My family now knows all about having to rate recipes, picking their favorite chefs, etc. It's become a family thing and they have told me that I may never let my membership to Recipezaar ever end. <br /> <br />We love to travel and try to go whenever we can. Owning our own business has helped free up time where we can travel more. We've done some Europe, Canada, and much of the U.S. In the coming years I hope to do a lot more. Eating out when we are traveling is the best. I'm trying to learn more about the restaurants and chefs in places we are visiting so we can try and visit those restaurants and enjoy some of the great places our town just doesn't have. <br /> <br />The whole family loves to ski and we look forward to the season every year - it makes winter tolerable. Renting movies or just hanging out with friends is the making of a relaxing weekend for us.</p>
