Made this using 2 large eggs & 3 egg whites, then reduced the mushrooms by half! That still made nicely satisfying bagel sandwiches for the 2 of us! Not something we'd have more than a couple of times a month, but still a nice change of pace for our breakfast! [Made & reviewed in Healthy Choices ABC recipe tag]

Simple, filling and tasty. I was excited when I discovered I had everything on hand except the mushrooms. In normal fashion, I tweaked the recipe as I went along, but stuck to the general flavors of the dish. I cut and lightly toasted a garlic poppyseed bagel and spread on some of the crab boursin cheese I made from this weekend http://www.recipezaar.com/Crab-Boursin-Spread-137790 The omelet was fluffy and the feta cheese was a perfect compliment to the flavors of the cream cheese and garlic. It was so filling I could only eat half of it - DH was more than happy to oblige :) Thanks for the recipe! This was made for PAC.
