- 2 lbs boneless skinless chicken breast halves, and fat removed

Marinade
- 1 tablespoon toasted sesame oil
- 1 1⁄2 tablespoons soy sauce
- 1⁄2 lemon, juice of
- 1⁄2 teaspoon red pepper flakes
- 2 teaspoons Dijon mustard
- 1⁄4 cup dry white wine
- 1 clove garlic, minced

Dressing
- 1 clove garlic
- 1 tablespoon toasted sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons sherry wine vinegar
- 1⁄3 cup olive oil

Salad
- 1⁄2 cup thinly sliced red onion ring
- 1 1⁄2 cups sugar snap peas
- 1⁄4 cup craisins
- 1⁄2 teaspoon fresh ground black pepper
- 3 -4 cups fresh lettuce (not iceburg)
directions
- Place the chicken in a glass dish.
- In a bowl, whisk together all the marinade ingredients and pour the marinade over the chicken.
- Marinate, covered, for at least 3 hours or ideally overnight in the refrigerator.
- Grill the chicken or place under a broiler, turning the pieces until just cooked through, 4 to 5 minutes per side.
- Discard the marinade.
- Cut the grilled chicken into bite-size strips and place them in a large bowl.
- Using a food processor or blender, puree the dressing ingredients until smooth.
- Pour the dressing over the chicken.
- Add the onion rings, snap peas, cranberries, and pepper.
- Toss to blend.
- Add the lettuce and toss lightly.

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
