Yum Yum Cake

"This makes a large cake, perfect for a pot luck or a family gathering. It is a fairly flat cake--ends up less than two inches high after you have added the toppings. This recipe came from my sister-in-law in Chicago. I had a piece at a family reunion dinner and couldn't leave without the recipe! Yum Yum!"

directions

  • Grease and flour a 12 x 17 or 12 x 15-inch pan.
  • Mix cake according to directions and bake for 20 minutes or until done; let cool completely.
  • Cook pudding with 1 cup milk, let cool.
  • Mix pudding, cream cheese and frozen topping with mixer; spread over cool cake.
  • Top with crushed pineapple.
  • Sprinkle with coconut and nuts.
  • Be sure to refrigerate leftovers.

  1. I have instant pudding I have gone twice to the store and twice I have bought instant why do I need to have cook pudding instead of cook instant pudding can I substitute one for the other substitute

  1. This recipe is super awesome. My mom found one that says not to use instant pudding. I was glad when I found this version. We used a lemon cake mux last time. I am making it again but this time we are using a lemon cake mix, lemon pudding and mandarin oranges in place of pineapple. Once we did it the regular way but mixed pineapple and mandarin oranges. We have to leave the nuts off because I am allergic ?. I like it with the coconut toasted but we usually leave the coconut off.
     
  2. What a game and what a recipe! Yum Yum was a smash for the Super Bowl! A refreshing treat after the big game and some "adult beverages". A couple of sliight modifications really helped too. Both walnuts & macadamia nuts, and fresh crushed pineapple. Bueno! Thanks Sharlene & Kit-Kat!
     
  3. What a mistake! I was so intreigued by this recipe that I made it with out a large event to take it to. Do not do that! My mom, my daughter and I had to eat it all by ourselves!! ;-) This is a wonderful, cool refreshing cake. Some little tweaks that I might try next time are to use chopped macadamia nuts instead of walnuts and to whip my own cream, as long as I know that it is in a situation where it will all e eaten at once. (And I do not mean all by me at one time. Must practice self control....) Thanks for sharing Sharlene!!

I live in the San Francisco area and love it here. I discovered Recipezaar (then Food.com..Genius Kitchen) in 2001 and have been so happy to have my favorite recipes stored safely here. I am mother to 7 and grandmother to 7. I love to knit, smock, sew, etc., but my favorite hobby of the moment is traditional rug hooking. This is a sample of what I do.? It's called "November".? I dyed most of the wool myself. It is made from wool flannel, cut into strips a little less than 1/4" and then worked into a linen backing. This is my 3rd rug.
