I make these up and throw some chicken in. I then freeze them and when I want them for lunch or to take to work, I just take one out of the freezer and by the time I get to work it is ready to be zapped. Yum!
Easy, quick, inexpensive, and DELICIOUS. I added chicken, served the quesadilla with guacamole, sour cream and salsa accompanied with refried beans and mexican rice. family loved it.

Fast and easy...much tastier than throwing together a sandwich. I used smart balance butter and just used fiesta blend cheese with some taco sauce sprinkled on top of that. Great Little Meal!
Ummmm, oh my GOODNESS. This was my first time ever making quesadillas. I was born and raised in Southern California so I know VERY well how good quesadillas should taste... I definitely had a very very strong assumption that even after years and years and years of attempting to make quesadillas they would DEFINITELY come nowhere near the food I grew up eating over there... Nonetheless on the FIRST time, but let me tell you... Absolutely astonishingly they tasted EXACTLYYYYY like the taco shops you find... I mean it was mind-blowingly amazing haha. Agreed! I like serving these with chilli con carne, and sometimes even with a curry if I want to serve bread in a hurry. I add coriander and cheese, preferably Monterey Jack.
Finally a simply, and tasty Quesadilla recipe! Having traveler in Mexico, I realised that a lot of the so called "quesadillas" that are made up north are a totally different variety. Simplicity and good ingredients is the key and this recipe hits the spot in that sense. Thank you for sharing!
