Your Basic Quesadilla

  • In a pan skillet large enough to hold one of the tortillas flat, melt ½ of the butter.
  • Fry one side of one of the tortillas, then remove it from the pan.
  • Put the rest of the butter in the pan, then put the unfried tortilla in to cook.
  • Immediately sprinkle the cheese on top of the tortilla in the pan, then top with the previously fried tortilla, browned side up.
  • Press them together with a spatula and fry the quesadilla until the cheese is melted.
  • Remove it from the pan and cut in wedges like a pizza.
  • Top with sour cream and/or salsa.
  • Enjoy!

  1. Ummmm, oh my GOODNESS. This was my first time ever making quesadillas. I was born and raised in Southern California so I know VERY well how good quesadillas should taste... I definitely had a very very strong assumption that even after years and years and years of attempting to make quesadillas they would DEFINITELY come nowhere near the food I grew up eating over there... Nonetheless on the FIRST time, but let me tell you... Absolutely astonishingly they tasted EXACTLYYYYY like the taco shops you find... I mean it was mind-blowingly amazing haha. Thank you so much for this! Customer for life ;);););)
     
  2. Made these but used Extra Virgin Olive Oil instead of butter with marbled cheese (basically monterey jack and colby) and Pace Chunky mild salsa and they were amaaaaaazing. Honestly the best cheese quesadillas I've ever had.

  3. Agreed! I like serving these with chilli con carne, and sometimes even with a curry if I want to serve bread in a hurry. I add coriander and cheese, preferably Monterey Jack.
     
  4. I make these up and throw some chicken in. I then freeze them and when I want them for lunch or to take to work, I just take one out of the freezer and by the time I get to work it is ready to be zapped. Yum!
     
  5. Easy, quick, inexpensive, and DELICIOUS. I added chicken, served the quesadilla with guacamole, sour cream and salsa accompanied with refried beans and mexican rice. family loved it.

  2. Great Directions! Perfect recipe. I added steak to half of ours and served them with hot peppers instead of salsa. Everyone loved them including the four year old! Thanks!

I live in a little house with my husband and my three "puppies" (all dogs are puppies to me, no matter how old they are). We have no children as of yet. I love to cook, but not to clean, and I won't cook unless my kitchen is clean, so I don't cook as much as I should. Some of my other hobbies are: role playing games, reading, SCA, garage saleing, and sewing. I am a pack rat, but I am trying to cut back on that, and I have far too many kitchen gadgets and cookbooks.(If there is such a thing.)
