A "plain" muffin recipe, posted in response to a request on the message boards.
- Preheat oven to 425 degrees F.
- Mix together all ingredients and pour into greased muffin tins.
- Bake at 425 degrees F.
- for 10-15 minutes or until golden brown.
I had no luck with these muffins. The mix was way to dry so I had to add roughly 3/4cup of milk just to make a "batter." Then they did not brown at all even after an add. 5 minutes cooking. They deflated while cooling and fell apart once out of the pan. I don't know if I will use this again.
if you like the taste of plain yogurt you'll like the muffins. I think it's a good base to flavor anyway you want. I tossed in some sugar, pumpkin and spices. they turned out nice.
