directions

  • Fill a crockpot with boiling water and heat it on low.
  • Heat the milk in a large saucepan over medium to medium-high heat until it reaches 180 - 200 degrees.
  • Take off the heat and let it cool to 110 - 115 degrees (you can use an ice bath in the sink to speed up this process). If too hot or too cold, it may not work.
  • Add 1 cup of milk to the yogurt and stir storoughly. Add another cup of milk and mix well.
  • Unplug the crockpot and dump out the water. Pour in the cooled milk and yogurt mixture. Stir.
  • Place the lid on the crockpot and cover with a bath towel. Let it sit out at room temperature for 12 hours., then let it sit in the fridge for another 6-8 hours.
  • Put a cheesecloth over a colander to drain out the whey, anywhere from 20 minutes to an hour (depending on how thick you like your yogurt to be).
  • To make the fruit sauce, simmer all the ingredients for 5-7 minutes until thick.
