This is so so quick and easy you will have it ready in no time, it's great when unexpected guests visit. Serve with potato crisps or little crackers.
- 1⁄2 kg carrot
- 300 g strained yoghurt
- 2 cloves of mashed garlic
- 1 teaspoon salt
- 3 -4 tablespoons olive oil
- 1 tablespoon lemon juice
- 1⁄2 cup of roughly ground walnuts (optional)
- Scrape the carrots and grate them. Whip yoghurt with remaining ingredients, throw in the carrot and mix well.
This makes also a very tasty side dish. Minced garlic (use it while grating), 1/2 wisp of ginger and 1/2 wisp of turmeric powder. It's done! you can eat it as a side dish for your favorite meat or if you're a vegetarian like me, eat it as a salad. I'm sorry for vegans though.
This was served with sliced cucumber and red pepper strips for an early Christmas celebration with friends. The carrots were grated; however, everything was whirled together in my Vita-Mix to get it the consistency I really wanted. Everyone loved the dip and it was extra wonderful since it was low in fat and calories. Made for Tis the Season in the Diabetic Forum.
this would be a nice cool salad i went easy on garlic and added lime juice and the wanuts bumped it up just chopped them fine the color is pretty im not thinking a dip here salad diffently salad
