Yet Another Minestrone

"I realize there are lots of minestrone recipes out there. Here's another one. This one is meatless and can easily be made completely vegetarian by using vegetable stock. I like to splash in a bit of wine when I make this. Adapted from Cook It Light: Pasta, Rice and Beans."

  • Combine the onion, garlic and carrots in a large pot or soup kettle and cook, covered, over low heat till onion is soft and translucent, about 10-15 minutes.
  • Stir occasionally and add a little water or stock if necessary to prevent scorching.
  • Add tomatoes, stock, oregano, marjoram, basil and pepper and bring to a boil over med high heat.
  • Add pasta and cook till tender, about 10 minutes.
  • Add the beans and their liquid, the spinach and parsley and cook till heated through, about 5 more minutes.
  • Serve with grated parmesan cheese on the side to sprinkle on top, if desired.

  1. Very tasty ! I came home from work and DH announced that he'd made this for dinner.. I lifted the lid of the pot and burst out laughing when I found that he'd made it with Bob The Builder pasta shapes! .. he said " well it said " other small pasta" in the recipe,.. and this IS " LOL, cooking can be a giggle some days :) The taste was good, strong and hearty, and once you have had a decent plateful you are quite full, so this is not a starter soup, more a true Main Course one. I liked this better than DH did, but he never was too much of a soup fan so I rated this as a soup lover should. Please see my rating system: 4 lovely stars for an easy and excellent winter night's evening meal. Thanks!
     
  2. Thanks for a great soup recipe. We are in the deep freeze here in MO and this hit the spot. I did add another can of broth, as my soup was very thick. I also added some celery and I used frozen mustard greens instead of spinach. I used white cannelli beans. Thanks again!
     
  3. Good soup! I realized at the last minute that I didn't have kidney beans and macaroni noodles so I substituted pinto beans and farfalle. This was a nice, simple and tasty soup. Thanks Pattikay.
     
  4. I love minestrone and this recipe was very good! I cheated and bought the matchstick carrots, vegetable broth instead of the others, fresh spinach, and the dried parsley. Added a little more pepper and did use the small macaroni. The seasonings are perfect and the parmesan cheese, definitely add that! Thank you Patti for my new favorite minestrone recipe!
     
  5. I just loved this soup, but did make a few changes. I couldn't find my can of tomatoes, so used tomato with roasted garlic soup. I used vegetable stock, 3 cloves of garlic, left out the kidney beans and the parmesan cheese. Thanks for posting!

The first time I ever set foot on California soil (or anywhere in the West, for that matter) was the day I moved here. I experienced a form of culture/environment shock for about a year&nbsp;- even the air is different out here! For the first year, I would look at the roads and driveways that wind steeply up and down the foothills and think, Man, how does anyone drive on those in the winter? Then I would remember&nbsp;- they do it the same way they do in the summer&nbsp;- with their windows down, wearing shorts and flip-flops. I love the fact that we are near a large city, near the ocean, near the desert, near the mountains&nbsp;- what more could I ask for? And yes, even though I swore it wouldn't happen to me after living for more than 40 years in places with many weather extremes&nbsp;- I now get chilly when the temperature dips below 70 and can barely bring myself to go outdoors if it's raining. However, I do NOT wear a parka and mittens when it's 65 degrees&nbsp;- a sweatshirt or light jacket will do. <br /><br />My husband and I met while attending seminary (I dropped out before finishing one semester but he got a Master of Divinity) and we got married after knowing each other for 6 months. We are quick to tell other people that we do not advise this course of action, but we celebrated our 27th anniversary this year, so I guess sometimes rash decisions work out quite nicely. So with my husband's MDiv and my undergraduate degree in religious studies, we now both work in pharmaceutical marketing research. Just what you would expect, right? I telecommute to the east coast for work each day; I'm primarily a writer/analyst. When I was in college, writing so many research papers and unable to decide what I wanted to do when I grew up, I used to jokingly say that I should find a job writing research papers. More than 20 years later, that?s basically what I do. Cool, huh? <br /><br />Our wonderful son was born when we were married just one year and a mere 15 years later our bright-eyed redhead came into our lives (okay, so she was totally bald till she was nearly 2, but she's definitely red now). My kids are my best and constant reminder that perfect timing is something determined by God and not by me, since I wouldn't have dreamed up such a family-planning scheme, and yet it works just right for us.
