The best meatloaf I have ever had. I made it exactly like the recipe except I only had dried onion flakes. It turned out amazing! I will try it with fresh onion next time.
My meatloaf just always falls apart, pink in middle, burnt on outside. I was really hoping this one would be different because I love meatloaf.
Delicious! Best and only meatloaf I will ever make. My kids complained all day they didn't want meatloaf, but once it was made, my son who is a mashed potato fiend, inhaled it all while making that omg this is good sound and left the potatoes barely touched. <br/>Being gluten free, I made a few small changes as per other suggestions. 1/3 cup milk, 1/2 cup Ian's gf Italian breadcrumbs, gf Worchester sauce and a dash of dry mustard.<br/>I couldn't take the vinegar smell in the sauce I prepared, so I took some ketchup, brown sugar and a dollup of barbecue sauce. Turned out excellent.<br/>This is a keeper!
LESS IS MORE. The beauty of this meatloaf is its simplicity. The only aromatics are the onions, and it's not loaded with a menagerie of meaningless vegetables and spices. Meatloaf is about meat. After 50 years searching for the best meatloaf, my search is over. THIS IS IT.

This recipe was AMAZING!!!! My husband even said that he felt like it was the bestearloaf he's ever had, and his mother is Hispanic and can cook a storm. I've had her meatloaf, and this really is awesome!!! I was worried that the sauce would taste a bit too much like vinegar, but it was the perfect taste with the meatloaf. We LOVED it!!!

This was a good first meatloaf for me. I too added 1 tbs Worcestershire as a replacement for 1tbs of the vinegar in the sauce. I also added a couple of garlic cloves and sauted with the onions before adding to the meat mixture and added a teaspoon of all purpose seasoning. It came out very tasty.
Great basic recipe. A couple of options to add very simply to add a bit of 'zing' would be shredded carrot (even the pulp left over from juicing carrots would and does work), corn - frozen or out of a can (just soak the frozen corn in some boiling water first. I also like to add a little ground cumin. Loads of pepper and a little salt too.
Took some suggestions for substitutes, used 3TBS of Apple cider vinegar and 1TBS of Worcestershire sauce for topping. Used 1/4 cup original stuffing, sauteed the onions with a bit of garlic. Most amazing meatloaf I've ever had. It came out so moist and flavorful it literally put my boyfriend into a food coma. He said he couldn't believe how good it was and no meatloaf at any restaurant could compare. This was my first time making meatloaf and won't be the last.
