I made this recipe using both zucchini and yellow squash. I also added a little soy sauce when it was almost done. Easy to make and tastes great. I served this with Hamburger Steak and Gravy and Creamy Mashed Potatoes. Made for July 2011 All You Can Cook Buffet.

This is a wonderful vegetable dish. It is great to use with those vegetables you have in your garden. I used fresh garlic and also added zucchini. I served it with "Chicken Scampi".

I will be having this often this summer as the garden produces. I think it is such a great idea and is so much lower in fat and calories. I did use fresh garlic and reduce the oregano a bit for personl preferences. The bonus to me was crisp/ tender veggies. Well done blink!

Hey Blink,Sorry I have taken so long in getting around to rating this,I made it a couple of months ago (about 3 times now) when we had fresh squash from our garden, but I have let my recipes that needed to be rated stack up,so I am trying to get them all out now.But want to tell you your sqaush saute was really great. Thank You, Darlene

This is an awesome dish... growing up in the south we ate something very similar (without the basil and oregeno) quite often in the summer when the squash and zucchini are taking over the garden...next time I make it I'll try the basil and oregano. Thanks Blink
