- 8 yellow squash, grated
- 1 medium onion, finely diced
- 2 tablespoons salt
- 1 cup self-rising flour
- 1⁄2 cup cornmeal
- 1 egg
- 1 cup grated cheddar cheese (optional)
- black pepper
- 2 -3 tablespoons oil (for frying)
directions
- Place grated squash and onion in a colander over sink and sprinkle with salt. Let them drain over the sink until all moisture is gone. Add flour, cornmeal, pepper, egg and cheese. Mix well. Form into patties and fry in a little oil.

I tried this recipe for my picky family. I used 6 yellow summer squash and 2 green zucchini unpeeled. I also added 1 small can diced green chilies I used 1/2 c cheddar cheese and 1'2 c mozzarella cheese. After frying, I topped them with our favorite spaghetti sauce and then with mozzarella cheese and baked them for 30 minutes. This is a really great basic recipe that is so easy to tailor to your family's likes and particular tastes. Thank you so much for posting this one! I had been looking for one like this for a while and wasn't able to find one!!
