This is a dish we had for any and every special occasion when I was young. I love the original version, which I am posting here, but you can play with it and make a light version with low fat items and it is delicious as well.

Ingredients Nutrition

  • 2 tablespoons bacon grease
  • 6 -8 medium yellow squash, sliced
  • 1 large onion, chopped fine
  • 1 -1 12 cup cheddar cheese, grated
  • 12 cup butter
  • 1 (8 ounce) package saltines, crumbled
  • salt and pepper

Directions

  1. Preheat oven to 350.
  2. Saute onion in bacon grease until clear. (You can use marg. instead but bacon grease gives a good flavor)
  3. Layer squash, salt and pepper and mix with onions.
  4. Cover, cook on low to medium-low until squash are almost tender.
  5. Mix in cheese and 1/2 tube of cracker crumbs.
  6. Mix well, place in 2 quart casserole dish.
  7. Melt butter.
  8. Mix remaining crackers with melted butter.
  9. Top casserole with crackers.
  10. Cook, uncovered for 30 minutes or until brown and bubbly.

Good stuff. I used the last of the squash from my garden.I used butter instead of bacon grease and the flavor was very good. The squah was nice and tender. Went nicely with the crunchier texture of the crackers.

Sounds great! I'm just going to change up the recipe a little bit when I make this...I am a vegetarian, so I'm going to use margarine rather than the bacon grease, and the only cheese we've got is fat free, so this recipe I think will be a little more heart-healthy! Thanks!
