this is the best pasta on Yellow Cab (Philippines) menu. this recipe is good for 8 to 10 servings.
- 1 whole boneless chicken breast
- 1⁄3 cup olive oil
- 3 tablespoons sesame oil
- 1 piece onion
- 2 garlic cloves
- 1 1⁄4 tablespoons char siu sauce (lee kum kee)
- 1⁄4 teaspoon chili-garlic sauce
- 9 tablespoons oyster sauce
- 1⁄8 cup sugar
- 4 tablespoons water
- 1 kg cooked pasta
- peanuts (optional)
- Sauté onion and garlic in a little olive oil.
- Cook chicken until brown.
- Mix sesame oil, char siu sauce, oyster sauce, chili garlic, and sugar in a bowl.
- Add liquid mixture to chicken and simmer for a few minutes.
This a good recipe! Just add dried mushrooms or shitake! Btw you need to change the measurements depending on your taste. I altered some. I ll do this again! Yum yum. my husband loved it. Thank you!
There's too much oyster sauce in this recipe so the sauce turned out really salty. I salvaged the dish by setting aside a cup of the sauce and adding 1 cup of water and 1/2 cup chunky peanut butter to the remaining sauce. I added a little more sugar too. I salted the noodles during boiling so I rinsed it under running water in order to remove any more salt that could add to the sauce. Having done all that, the pasta turned out tasting exactly like the Charlie Chan that I used to enjoy in Yellow Cab. The next time I make this, I'll put only 1Tbsp oyster sauce and then add soysauce a little at a time to control the saltiness. I also used only 3tbsp of olive oil for sauteing and I added the sesame oil right before serving.
Oh my! Thanks for the recipe! I've been craving charlie chan pasta. I didn't see the mushrooms on the list of ingredients... I seem to remember shiitake mushrooms in there. I'm gonna have to try it with the shrooms hehe! Cant wait!
