  • 1 lb yellow beet
  • 2 tablespoons sherry vinegar
  • 2 tablespoons orange juice concentrate (undiluted)
  • salt and pepper

Directions

  1. Cook beets until tender.
  2. Cool, peel and slice beets.
  3. Toss with sherry vinegar and orange juice concentrate. Season to taste with salt and pepper.
