This is terrific. I used half olive oil and half butter and didn't really saute until browned, just to the crispness I prefer. The flavor was wonderful.

Ingredients Nutrition

  • 3 green squash
  • 3 yellow squash
  • 4 tablespoons butter
  • 4 tablespoons cajun spices


  1. Start by melting the butter and adding two tablespoons of spice.
  2. Layer the squash in the pan at a depth of one slice
  3. Sauté until golden brown.
  4. Add the rest of the butter and spice.
  5. Finish browning and serve.
