  1. In a large mixer bowl, dissolve yeast in warm water.
  2. Add remaining ingredients; beat until smooth.
  3. Cover; let rise in warm place 1 1/2 hours.
  4. Stir down batter.
  5. Cover again; refrigerate 8- 12 hours.
  6. Stir down batter.
  7. Pour from cup or pitcher onto center of hot waffle iron.
  8. Do not overfill iron.
  9. Bake about 5 minutes or until steam stops.
  10. Variation: Pecan Waffles.
  11. For each waffle, sprinkle 1/4 cup chopped pecans on heated waffle grids.
  12. Close iron; heat about 3 minutes or until nuts are golden brown.
  13. Pour batter over nuts and bake as directed above.

These are wonderful, light waffles, and the yeast gives them a more complex flavor than the standard "quick batter." It did take me a few tries to get the amount of batter and cooking time right, but the end result was worth it. I did notice that my waffle iron light went off *way* before these were really ready. Thanks, Leta, for sharing this tasty recipe. I served these dusted with powdered sugar, then with fresh lemon juice squeezed over them. Delicious!
