X-Treme Kiddo Cookies

"So named because I feel a bit extreme as I attempt to make reasonably healthy cookies for kids :). I have no idea how long these will store...will update if I get a chance to find out! BTW, I used yellow squash for the zucchini b/c DS will reject anything in which he can pick out green zucchini. The finished product showed no evidence of vegetables!"

ingredients

• 1⁄4 cup Smart Balance butter spread
• 1⁄4 cup sugar
• 1⁄4 cup brown sugar
• 1⁄2 teaspoon vanilla (or more if you're me!)
• 1 egg
• 1 1⁄8 cups oatmeal
• 1⁄4 cup flour
• 1⁄4 cup rye flour
• 1⁄2 teaspoon salt
• 1⁄2 teaspoon baking soda
• 1⁄3 cup zucchini, grated
• 1⁄8 cup chocolate chips
• 1⁄8 cup butterscotch chips

directions

1. Preheat oven to 375^.
2. Cream Smart Balance and sugars.
3. Add vanilla and egg, mix again.
4. Add dry ingredients and mix.
5. Fold in chips and zucchini.
6. Drop by even tablespoons onto an ungreased pan.
7. Bake 10-11 minutes.
