Out of an old 1998 WW cookbook called "15 Minute Cookbook" I have this marked as "great". If you don't care for the strong lemon like flavor of cilantro you can substitute parsley if you prefer. This is great served with black beans, pineapple wedges and fresh strawberries. Hope you enjoy!

  1. Coat a large nonstick skillet with cooking spray; place over high heat until hot.
  2. Press chops with palm of hand to flatten slightly; add to skillet and cook 1 minute on each side or until browned.
  3. Reduce heat to medium-low.
  4. Combine salsa and lime juice; pour over chops.
  5. Simmer, uncovered, 8 minutes or until chops are done.
  6. If desired, sprinkle chops with cilantro.

A great meal doesn't get much easier than this! I used homemade salsa (spicy) and the lime juice was a great addition, perfect with the pork. Served with some corn tortillas and a black bean salad I had made earlier in the day and dinner was on the table in 15 minutes. Thanks for sharing your recipe!

I liked the zing of lime in this dish - very fresh tasting. I made 1.5 times the recipe and will freeze a couple of the chops for meals for my DFIL. I did have to cook the chops for 15 to 20 minutes and used parsley - we have a no cilantro house! LOL! Made for PRMR tag. Thanks TeresaS! :)
