From Weight Watchers International Cookbook. This cookbook does not list the nutritional information so you will need to guesstimate it yourself!
- 3⁄4 cup buttermilk
- 1⁄2 teaspoon coconut extract
- 1⁄2 teaspoon rum extract
- 3 ice cubes
- Place all ingredients in blender and process at high speed until smooth.
- Serve in tall glass.
Very yummy. It did need a bit of sweetness with just the rum extract, so I added a tsp of maple syrup. I tried it with real rum instead of the extract and it was just sweet enough.
My DH loved this! I did add in some sugar and used full-fat buttermilk, and ended up making two glasses of this. This is rich an creamy, thanks so much mariposa!
