This is the only way I will eat carrots. They are soooo sweet.
- 1 (16 ounce) bag baby carrots, organic
- 1 1⁄2 teaspoons olive oil
- 1 tablespoon chopped fresh parsley
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- Heat oven to 450. Mix carrots and oil in a 9x13 pan. Single layer. Bake 20-25 minute Stir 1/2 way. When soft, toss in the parsley, salt and pepper.
We seasoned with sea salt and a sprinkle of ground ginger. Yum!
These are very good,very nice and tender.I didn't have fresh parsley so I used dried.My boyfriend hates carrots but he liked them done this way.Thanks!
