I used a little a 2 lb pork loin. It took longer as expected but it took longer because of me. I read up on cooking pork. They advised 160 is the perfect pork temperature. With this said, they advised to pull out at 150-155 and let it sit. This would give it a little bit of a pink color inside. I cooked mine a little longer b/c of my taste. I doubled the sauce but not the apples. I used canned whole cranberries in sauce. I cooked for 30 minutes and it was perfect. IMO, you will have simmer the sauce longer if you use fresh cranberries. No other changes. Baby Ray's is my favorite BBQ but I think I will use a different kind next time. I did have some leftover sauce. I would make this again.people found this review Helpful. Simply delicious. I had a doubt or two about the mixing of cranberries and BBQ sauce but forged ahead and was blessed for doing so. I didn't add the brown sugar or any Splenda, the apple supplied all the sweetening it needed (for me). DH was not in love and gave it a total pass. The flavor in interesting and intricate, it's tart-tangy and sweet all at once. I did need to cook the sauce a lot longer than stated because the apple didn't want to break down (I had Golden Delicious). I found this to be a great tasting pork dish, but then I'm a very big fan of the cranberry! Although I did follow the recipe, I did use a quart cup of homemade cranberry BBQ sauce, so the cranberry flavor was probably a bit more intense than intended! This is the first time I have eaten cranberries (we can only get dried or frozen and I wasn't even sure of that until I went looking) but after reading about how good they are for diabetics I thought I would give a go. The DH took a whiff and said no he would have our regular apple sauce. I used a pink lady and a granny smith and between 3 of us ate about half the mix (so serving size is spot on) and though nice I would have to say prefer our regular apple sauce but as said earlier not having tried cranberries I didn't know what to expect therefore I will review this without stars and let those who are familiar with cranberries be the judge.
