  • Pre-heat oven to 400 degrees F.
  • Line muffin cups with 12 paper inserts or spray with oil spray.
  • In a medium size bowl, peel and mash bananas. Add honey, egg white, milk and oil. Mix well.
  • In another bowl, mix flour, rolled oats, baking soda, salt, baking powder and chopped walnuts. Mix well.
  • Add wet ingredients to dry and mix just until moistened well. Divide batter evenly between the 12 muffin cups and cook 18-22 minutes until slightly brown on tops or until desired doneness.
  • Remove muffins from pan and let cool completely on wire rack.
  • Store in refrigerator or freeze.

  1. These are very good for being lowfat. I used whole wheat pastry flour, which helped keep them lighter. I will add some cinnamon next time, though, for a little extra zip. The texture was great.

  5. I will be making these this afternoon but I put it in WW for the point value. I replaced Honey with Maple Syrup and Milk with Almond Milk because that's what I have on hand. Each muffin will be 4 SP. Looking forward to it!

Tweaks

  1. I only replaced 20% of the whole wheat flour with unsweetened cocoa powder. Walnuts, banana, cocoa and honey flavors together make a delicious mix, and the whole wheat flour and oats give it a much better texture than regular all purpuse flour
     
  2. I made quite a few modifications based on what ingredients I had on hand, but my family really enjoyed this recipe. I used 3 very ripe bananas, about 3 T of honey, added a splash of vanilla extract, and 1/2 cup of Greek yogurt in place of the milk. I also added a brown sugar oat streusel since I was afraid the muffins wouldn't be sweet enough (I had nothing to worry about). The muffins were a little dense due to the whole wheat, but they rose beautifully and had a lovely golden color. They were flavorful and very moist so I will definitely make these again!
