Ww-Friendly Onion Rings

  • Preheat oven to 375 degrees.
  • Cut edges off onion, and remove outer layer. Cut onion into 1/2 inch wide slices, and separate into rings. Next, fill a small bowl (just large enough for onion rings to fit in) with Egg Beaters.
  • Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consistency. Pour crumbs onto a small dish.
  • One by one, coat each ring in egg and then crumbs (give each ring a shake after the egg bath). Place on an oven-safe baking dish sprayed with nonstick spray. Cook for 20-25 minutes, flipping rings over about halfway through.
  • **Although you’ll only actually use a quarter cup, it may be easier to dunk the rings if you dole out a bit more Egg Beaters while preparing.

  1. I love these onion rings! This is the only recipe I use when making homemade rings. I mix seasoned salt and pepper into the Fiber One before breading.
     
  2. These were really good - crunchy & satisfying on my low-ish carb diet. Add some salt, pepper, garlic & onion powder to the Fiber One and it is even better! I like the thicker cut slices of onion better than the thinner. Great stuff, glad to have seen this recipe on RecipeZaar!
     
  3. These are very interesting, I'm glad that I tried them. The Fiber One cereal is something that I had never had before, it has a nutty, sweet taste to it. I used a regular egg, ended up needing more than one. I used a large yellow onion, it was particularly pungent. Delish, senseicheryl
     
  4. Yum! I used a really large white onion, didn't note what kind but it was sweet. I do recommend serving them warm, once they were getting cold they weren't as good.
