- 2 cups cubed honeydew melon
- 2 cups chopped English cucumbers
- 2 tablespoons chopped of fresh mint
- 2 tablespoons fresh lime juice
- 2 tablespoons finely chopped red onions
- 1⁄8 teaspoon salt
- mint sprig (to garnish) (optional)
- Combine all ingredients and toss gently to coat. Cover and chill until ready to serve.
- Garnish with mint sprigs before serving if desired.
