We love this! It's a great base for some of my favorite things. We add mushrooms, onions, ham, artichokes, tomatoes and on and on and on. Tonight we've added chicken and tomatoes for a healthy easy dinner. It's loaded with nutrition!
- 10 ounces frozen spinach, thawed and drained
- 1 cup fat-free cottage cheese
- 1⁄2 cup shredded fat-free cheddar cheese
- 3 eggs
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 minced garlic cloves
