This isn't a 1 point cookie, it's a 7 point cookie. According to Core you can't make core foods into baked goods and call it core. Plus remember, your body is not counting points, it's counting every single one of the 334 calories in this recipe. You could fake yourself into thinking that you're eating "just one point" for breakfast every day, but you're still eating 334 calories.
It's not a "bad" recipe, by any means. I make it but it's slightly different. It's very healthy and filling. I give it 4 stars.

I make this all the time, I bake it in my toaster oven. I bake it a couple of minutes longer and when it is done I turn off the oven and leave it there for a while to firm up. Now it is just like a cookie. By the time I am ready to leave the house I can just grab and go. I also have used pumpkin instead of applesauce . . . . Yummy!

I don't eat eggs, so I have a hard time finding yummy Core recipes. When I tried this one, I billed it to my kids as a cookie. It looks like a big ole cookie, too, when it's on the plate. So that backed up my claim. The texture isn't exactly "cookie-ish," (it's a cross between an underdone cookie and a stiff pancake) but the kids liked it, and felt they were getting a treat. Even the baby scarfed it up! It was tasty and filling--and easy and fast! I quadrupled the recipe and baked on a baking stone. This is a Core winner! Thanks for the healthy recipe!

I liked this cookie. I made four at a time and created bars. Four times the recipe actually makes six good size breakfast bars. I wrap them in cling wrap, store them in the refrigerator and grab one on my way out the door in the morning. Very satisfying.

This was okay. It was more like a pancake then a cookie. The apple flavor was nice, but what it ends up being is oatmeal without the bowl.
