This was good, considering the WW pts value. Of course, it's not as cheesy/rich as higher fat versions, but it is a perfectly good substitute. Left out the onion (personal preference) and will definitely make again. P.S. 1 lb of potatoes will never feed 8. Must be a typo. You can use up to 2 1/2 lb of potatoes and it still comes in at 3 pts. each for 8 servings.
We loved this! Nice comfort food. I did cut the recipe in half and used an 8X8 dish. Worked great. The dijon mustard gave it a nice little kick. The sharp cheese did give it that rich flavor that you enjoy in scalloped potatoes. Thanks Lee tah for posting.
