1. Okay so I'm not going to rate this because, well mine collapsed on me. It was my first attempt at a souffle and was overall unsuccessful. However, the flavor was great and my bf said the soupy cheese mixture would be great on crackers, lol. Hopefully next time things will work out better.

 2. I didnt have any cayenne on hand, so used Old Bay seafood spice in its place. This is a wonderful recipe. Will most definately be making it again.

 3. Ellie, this was great. So easy and pretty enough for company. I followed the directions to the letter and couldn't have asked for better. It was light and airy. I served it with grilled chicken, steamed broccoli and a slice of fresh sourdough bread. Wonderful, even my DH who doesn't diet (or need to) loved it and asked to have it again. Thanks for posting

 4. Fantastic souffle! I feel like setting up a brunch party just so that I'll have another excuse to make this soon. I followed the recipe exactly and it turned out beautifully. Just the right amount of cayenne. Loved it. Thanks for posting!

I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!
