- 1 whole wheat pizza crust (like Boboli)
- 3⁄4 cup sun-dried tomato
- 1 cup pizza sauce
- 2 cups corn
- 2 cups broccoli
- 1⁄2 cup canned black beans, drained and rinsed
- 2 cups part-skim mozzarella cheese
- 1 cup mushroom
- 2⁄3 medium eggplant, chopped
- 1 teaspoon olive oil
- Sautee all veggies except broccoli in olive oil.
- Top pizza crust with sauce, then half of mozzarella.
- Top with veggies, and then remaining cheese.
- Bake as directed on pizza crust package.
