This is so good! I love it, low fat, healthy and easy. I used green peppers, zucchini, onion, broccoli, carrot and mushrooms. When I added the soya sauce the arma was fantastic. I also used one tortilla, put the filling on the half and folded over. I used 30gr low fat cheddar and I also added some tabasco sauce. Spicy!!! This was my lunch at the office for the next day. Wordeful! Thanks for sharing!

This is a great recipe. I didnt use canola oil. Instead, I sprayed the tortilla with olive oil Pam type spray. Omitted onions and peppers and added spinach. I have to say, I think the spinach really made the recipe. I also cooked the mushrooms a bit in some sesame oil and cumin before adding to quesadilla. I used real cheese also. The whole wheat tortillas are a must have also. Overall very easy any yummy! Thanks!

Very Good!! I used frozen veggies, but next time will use fresh. I also used fat free whole wheat high fiber tortillas and used my Cuisinart panini grill to make them. So easy and so good!!

LOVED these! A healthy meal but sooo delicious and filling. A liitle deceiving by the size of it but dont even worry about it. I had planned a dessert for after this but could barely eat dinner let alone dessert. TY mariposa

Excellent! I omitted mushrooms, threw in some chopped cilantro and spread some light sour cream on my tortillas. I grilled them on my indoor grill. So yummy! Thanks for sharing:)

SO good! Okay, so I really had to play around with this recipe based on what I had on hand. But that's the beauty of it, right? I skipped the mushrooms, carrots, and cheddar cheese... I used Maggie sauce instead of soy sauce, 1/2 cup low-fat mozzarella, Cajun seasoning, red pepper flakes, and high fiber tortillas. I really recommend adding corn and serving it up with a couple slices of fresh avocado. You'll love it like I did :) Will totally make again. Thanks!

loved these at applebees and had to make. I use a whole wheat small pita and slice pocket to open completely. I was able to get the vegetable mix in freezer section called a broccoli stir fry in bag and defrosted veggies in microwave... put on pita...added cheeses and topped with 2nd half of pita. melted in microwave not needing the oil...... was sooo good... will try in tortillas next time. SO good... thank you

This is wonderful! I almost passed on it because I don't like mushrooms (and I've tried to!) but I saw that someone else subbed spinach-which I DO love! I used broccoli & zucchini, low fat mexican cheese (about half the amt as called for), added cumin, chili pepper, oregano & minced garlic to the veggies. I used about 1/2 cup fresh spinach, but next time will increase it to 1 cup since spinach cooks down when wilted! I loved the soy sauce. I used one whole wheat tortilla; put my veggie mix on one half & topped it with the cheese-folded it over & cooked it on medium till nice & crispy. Served it with a dip made out of fat free sour cream & salsa. Fast, filling & easy-thanks so much for sharing!

This was very good -- granted, I made a lot of not-so-low-fat adjustments :> I added chicken and for the veggies I used carrots, onions, red peppers, mushrooms and swiss chard (similar to spinach). I sauteed the swiss chard with some garlic and set it aside. I then sauteed the onions, carrots and red peppers in olive oil until tender and set aside with the swiss chard. I sauteed the mushrooms in canola oil and added to the other veggies. I used regular Monterey Jack cheese and whole wheat tortillas. I cooked these with cooking spray on my griddle and they turned out delicious! I didn't use the spices (only because I forgot), and will try those next times. A terrific quesadilla recipe that was a big hit with me and DH (less so with the three little ones, but I'll keep trying :>)

Great queadilla! I didn't have any broccoli, so I made it without and it tasted terrific! Not sure I would add the broccoli if I had it now because it tasted so wonderful without.

These are so delicious. I have to say, I never would have thought broccoli or carrots would be good in a quesadilla, but this was so yummy. Even my husband liked it and he isn't dieting and loves meat! Thanks so much!

Wow! What a quick, easy, and delicious dinner this made! I followed the directions exactly and served it with Newman's pineapple salsa and low fat sour cream. Next time, I might be more brave w/ the cayenne pepper or use red pepper flakes. Very good and highly recommended! Thanks for sharing this recipe!

Tasted like restaurant quality quesadilla's! It was just filling enough and had a great taste. I used green peppers, onions, and carrots for the veggies and it was very good. Even my hubby liked it. Great with fat free sour cream.

This is a tasty no meat meal. I used yellow squash and zucchini instead of carrots and broccoli and added a chopped jalapeno. I also used low carb tortillas. They were served with sour cream and salsa.

Very good. I have had it in the resturant, its been a long time, but this seemed right on target! I made a few minor adjustments. I used 1/4 C. of regular shredded cheddar cheese instead of the 2 low fat versions (I don't like the taste of the low fat kind). I reduced the oil to 1 tsp. and the brand of Tortillas I used (Habanero's wheat)only come in 6 inch and are only 1 point each, so I was able to eat the whole thing for 6 points! Very good, thank you!
