  1. Preheat oven to 400 degrees.
  2. Coat a baking dish with cooking spray.
  3. Combine lemon pepper seasoning and flour.
  4. Lightly coat chicken with cooking spray, then coat each breast with flour mixture.
  5. Place chicken in prepared dish and bake until cooked through, about 20 minutes.
  6. In a bowl, combine scallions, lemon juice, curry powder, dressing, avocado, tomatoes and olives.
  7. Divide chicken breasts between four plates and top with avocado salsa.
