I got this recipe from a Weight Watchers meeting a while back. These are so good that I usually double the recipe and freeze the leftovers for quick dinners when time is tight. Let me know what you think!
- In a bowl mix stuffing mix, egg beaters and water and stir to miosten.
- Add turkey and mix well.
- Divide mixture amongst 12 pam sprayed muffin tins.
- Bake at 350 degrees for 35 minutes.
This is really good but on the dry side. DH dipped his in ketchup. I wanted to dip mine in bbq sauce but watching sugar and calorie intake. Very easy to prepare and filling too. Thanks for posting. :)
Since I made this for my family, and not counting WW, I added craisins and sunflower seeds to the mix. I used turkey breast and Pepperidge Farm stuffing mix and they turned out a bit dry. Maybe I overbaked them. Next time, I would add a couple of tablespoons of olive oil to keep them from drying out. We liked them anyway and I would make this again.
