Love this soup - fills you up and warms you up. I used a whole head of cabbage and doubled most other ingredients, threw in some tomatoes and other veggies, but I left out the zuccini. I may add them next time. Definitely a great addition to my recipe collection.
You know, i was going to only give this four stars b/c it's not my favorite thing in the world, but then i thought about it, and then decided to go for five because it's probably the best zero point thing i've tasted. I doubled the recipe for a potluck and i think it'll go over pretty well, especially with my vegetarian friends (i used garden vegetable broth and it tastes fine, i bet the beef would be even better though). i had to replace the green beans with peas, not being able to find my green beans (although i found them later, of course) and it taste fine, but the biggest addition i did was adding some Sriracha! I put 1/2 teaspoon in at first but then added another 1/4, and wow it really adds to it! It gave it just enough of a kick to make it more interesting and it helps flavor it even more. Also, this was very easy to prepare, and that's saying a lot, because i'm usually a disastrous cook. So, it deserves five stars, definitely.
This is a great one and even my grandchildren love it. You can use your imagination and change the vegetables around. I usually use what ever I have in the veggie bin but always use fresh cabbage. Don't be afraid to add a little heat to your liking. I usually make 6 cups at a time and it goes fast.
Great recipe. I went to make it and realized that I didn't have carrot so I substituted sweet potato. Turned out great. I am vegetarian so I used vegetable broth. Like a couple others mentioned, I used 1/2 can of tomato paste.
I found it needed something else for flavor so I added a squirt of sriracha sauce at the end. Gave it just the perfect amount of heat.
I made this & it was pretty good. But I found by using the beef broth it over powered the flavor of the vegetables. Next time I make it I will use vegetable broth.
Wow my coworker came to work with cabbage soup, it looked yummy so I goggled this recipe and made it on Friday. It was delicious. I didn't use green beans or tomato paste, instead I used stewed tomatoes , I love the tomato flavor and rustic feel of this soup. I had some corn bread with mine also.
ugh yuck...I am so sorry to post this comment, but this is the second time I've made this soup (it's only the second time because I forgot how icky it was the first time I made it) and this is an honest review. I don't know quite what it is that I hate about it, but whether I follow the recipe strictly or try so very hard to put more food in an attempt to save the poor soup, it smells and tastes awful. I am so sorry I made this, I know many other people had a lot of success, but next time I will need to try a different kind of cabbage soup with sausage and potatoes. Hopefully that will have a better taste.
I've been making cabbage soup for years.....the wrong way! This is the best recipe I have found. Not only was it quick and easy, but it has a substantial yet very fresh taste. I added double the basil because I happen to love it, but that's the only alteration I made. I can see how you could eat a lot of this and not get tired of it, which is the point.
What a terrific recipe for a super-low calorie soup! This was incredibly easy to make. I did not use zucchini simply because I did not have any in the house. I used fresh veggies, as well (I read some people used canned). I saut?ed the onion and celery in a little bit of EVOO before adding it to the soup and instead of adding the spoonful of tomato paste, I added a spoonful sun-dried tomato/basil pesto and 2 packets of red pepper flakes (the kind you get with pizza). This gave it a delicious kick and an "Italian-esque" flavor. This recipe is a keeper! Thanks a million!
This is a wonderful veggie soup recipe. I used homemade chicken broth since I had some in the frig but added a dash of Worcestershire to give it a beefiness and I think it really did help. I also skipped the zucchini and added some black beans. Really delicious and even better the next day!
