I followed the Recipe exactly, except I sauted the first veggies with a tsp of Olive oil & the soup is delicious! I topped it off with a bit of Pamresan-Reggiano which probably makes it a 1 point soup...Very Nice
My wife and I make this soup often. We have increased the quantities to yield approximately 8 quarts. We then can 7 Qts. (the amount that fits in my Pressure Canner) and store them for later. We love this soup and eat it often. We have dropped the beans and have added other vegetables instead. It always comes out good. Having jars of it on hand makes it easy to come up with a meal when you haven't planned anything. As soon as we get down to the last quart, we get the fixings to make another batch.
I prefer a variation of the WW soup (My Mother's Version: Weight Watcher's 0 Points Vegetable Soup). Thus the 4 stars.
Add pepper flakes, omit zucchini and green beans and replace with a few scoops of black beans. Beans make it a little more hearty.
I used 2 cans of chicken broth,and 1 1/2 12 oz.cans of V-8 also I used Napa cabbage for a milder flavor and added sauted mushrooms
Really great recipe. I wanted to just cut back on grains but I have a huge appetite and needed something to fill me up so I wouldn't be hungry all of the time. This soul was super tasty. I had some frozen homemade beef broth which really gave it depth. Easy to make, and made me feel full. I froze several containers and I will bring out as needed.
Haven't made this yet...according to WW Points Plus Values, this is not a 0 point soup! When I did the online calculations (I am a member), it was 1 per serving, which is still low. However, your serving size of 79g is only about 1/3 of a cup. Who eats just 1/3 of a cup of soup? So, add another 2/3 of a cup for a whopping whole cup (whoopee) of soup, and the points are actually 2. So, eating "all you want" is really not an option if you want 0 points!
This is hands down my most fav soup ! I add a can of diced tomatoes and keep adding to it as it goes down! Have even added a can of Amy's organic Tomato Bisque to it too. Never gets old. Thank you so much for this !
Not sure why your recipe reads (beef broth is best) I find chicken broth and vegetable broth just as tasty.<br/>To make it even simpler.... use canned sliced carrots, canned zuchinni, Agreed it is not fresh vegetables, but it will do in a pinch!
