- 177.44 ml sugar
- 14.79 ml cornstarch
- 2.46 ml cinnamon
- 0.61 ml nutmeg
- 236.59 ml water
- 3 (1296.99 g) can apricot halves, drained
- 14.79 ml butter

TOPPING
- 236.59 ml flour
- 14.79 ml sugar
- 7.39 ml baking powder
- 2.46 ml salt
- 44.37 ml cold butter
- 118.29 ml milk or 118.29 ml half-and-half
directions
- Set oven to 400 degrees.
- Grease a 2-qt baking dish.
- In a saucepan, combine the sugar, cornstarch, cinnamon and nutmeg.
- Stir in the water; bring to a light boil over medium heat; boil and stir for 1 minute.
- Reduce heat.
- Add apricots and butter; heat through.
- Pour into a prepared baking dish.
- FOR TOPPING: Combine flour, sugar, baking powder and salt in a bowl; cut in butter until crumbly.
- Stir in the milk just until moistened.
- Spoon over hot apricot mixture.
- Bake for 30-35 minutes, or until golden brown.

This is an extremely quick and easy recipe! However, there are a few issues I would like to make people aware of. I was a bit surprised that the recipe only called for one 15 1/2 ounce can of fruit. The recipe says it will serve 6-8 people, and there is only around 3 1/2 servings of fruit in a 15 ounce can, and this is not sufficient. I ended up using two 15 ounce cans of apricots and that was more in keeping with the ratios of this recipe. Also, when baking desserts using apples, apricots, peaches, and pears, NEVER underestimate the importance of cinnamon... I doubled the amount to one teaspoon and will add extra next time. I also mixed in 1/3 cup of quick cook oats to the topping along with one extra tablespoon of butter. I then sprinkled cinnamon and sugar over it b4 baking. Just like Grandma used to make :)
