- 1 lb boneless chicken breast
- 1 -1 1⁄2 lb eggplants, and sliced thick or 1 -1 1⁄2 lb zucchini, sliced thick
- 1 cup Wishbone Italian dressing
- 4 slices mozzarella cheese
- 1 (12 ounce) jar roasted red peppers, rinsed and drained
- 8 slices peasant bread, grilled

- Marinate chicken and eggplant/zucchini in 3/4 cup dressing up to 3 hours.
- Brush with remaining dressing and grill or broil, chicken and eggplant/zucchini until chicken is cooked through and eggplant/zucchini is tender.
- Layer chicken and remaining ingredients on bread.
