Slaw
- 1 tart apple, Cored & Quartered
- 1 tart green apple, Cored & Quartered
- 2 tablespoons lemon juice
- 2 large celery ribs
- 1 red bell pepper
- 4 cups cabbage, thinly sliced
- 2 Belgian endive, thinly sliced lengthwise
- 1 small red onion
- 4 scallions, thinly sliced

Dressing
- 1⁄4 cup rice vinegar, unseasoned
- 3 tablespoons olive oil
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 cup blue cheese, crumbled
directions
- Slaw: In a bowl, toss apples, lemon juice. Add remaining ingredients.
- Dressing: In a bowl, whisk ingredients. Add to slaw with 3/4 cup cheese. (Can be refrigerated up to 2 hours ahead.) Top with remaining cheese.

I love cooking, and recently changed my diet to include more vegetarian entrees. I am challenged by simultaneous recipe preparation, and sometimes don't prepare ingredients enough ahead of time. I love this site, and hope to grow and learn many things from the other members during my culinary journey!
