Another quickie that works in a pinch.
- 1 (14 1/2 ounce) can diced tomatoes
- 3 chipotle chiles in adobo (with 1 T. sauce)
- 1⁄2 cup onion
- 1⁄2 teaspoon dried oregano (Mexican if you can find it)
- Into a blender it all goes and process/pulse for 1 min-you want a few chunks.
- Pour into a saucepan and simmer for 15 min to reduce a bit.
