Good soup! We used a very flavorful turkey kielbasa (in half the quantity), but the flavor diminished after cooking in the crock pot for so long. Next time I would add it maybe an hour before dinner. I also added lemon pepper to the soup and squeezed lemon over it at the table. This soup is very nice for fall.
We had this cooking away gently all day in my large crockpot filling the house with a wonderful aroma and the promise of many warm bowls of yummy soup on the cooler autumn evenings ahead. :) I used all the listed ingredients plus 2 leeks, half a Savoy cabbage and a parsnip. I was glad that the recipe already had some wine in it as I would have added some anyway! I added a good sprinkling of basil, oregano, thyme, rosemary and sage and, as I'd added more vegetables, I added several extra cups of my Vegetable Stock, so we ended up with not 6 serves but what looked like about 10 serves in all. One of the great joys of soup-making is being able to be generous with ingredients, to keep adding while there's still room in the pot - and it not mattering. Well only mattering in that you can never exactly repeat it even if you want to. We greatly enjoyed the serving of this we had this evening with crispy ciabatta rolls. A wonderful blend of flavours and we loved coming across chunks of flavoursome sausage. So do use really tasty sausages if you're making this. Very good soup -- and very open to changes based on how much and what vegetables are available. I use turkey Italian sausage and the same vegetables listed but in varying amounts. Thanks for sharing this keeper which we enjoyed and will be having often.
