From my 42 year old cookbook written by Diana Liu. Winter melon is found in Asian markets. It is also known as white gourd.
- 1 lb winter melon (white gourd)
- 1⁄3 cup ham
- 1 (14 ounce) can chicken broth
- 3 1⁄2 cups water
- 1 inch fresh ginger
- 1 green onion
- 1 teaspoon sherry wine
- 2 teaspoons salt
- 2 dried Chinese mushrooms, diced (soak mushrooms in boiling water to cover for 20 minutes, squeeze dry and cut off stems)
- Remove melon skin and seeds, cut into 1" squares. Slice ham into thin slices. Cook broth, 3 1/2 cups water, ginger, green onion, sherry,mushrooms, and melon for 1 hour. Add ham for 10 minutes. Remove onion and ginger before serving. Serve hot.
