Serve this clear soup with hot steamed polished rice.
- 900 g winter melon, peel skin, remove seeds and cut into small cubes
- 150 g lean ground pork
- 1 tablespoon rice wine or 1 tablespoon sherry wine
- 1 teaspoon salt
- 1⁄4 teaspoon soy sauce
- 2 1⁄2 cups water
- Boil water in a saucepan.
- Add in winter melon cubes and simmer for 25 minutes or till winter melon cubes are soft (transparent looking).
- Add soy sauce, salt and rice wine to taste.
- Remove and serve.
